The Melbourne pastry chef was awarded the highest score in the competition’s history, for his Waltzing Matilda-inspired bread centrepiece.
Forty contestants from 80 countries competed in the bread-making event, as part of the International Exhibition of Artisan Gelato, Pastry, Confectionery and Bakery Production.
Mr Greenman said he was still coming to terms with his win.
‘‘We do create world class work in Australia and here is the proof,’’ he said.
The 33rd international exhibition for artisan food drew more than 19
Mr Greenman holds the title for the Australian Artisan Baking Cup, and won two medals in the Australian Pastry Championships in 2009.
